  • Harvest times: You want matcha that is in the first harvest as it is higher in nutrients compared to the second and third harvest. Our matcha is picked from the first harvest in Spring which offers you the highest levels of antioxidants, l-theanine and chlorophyll. 
  • Shading process: The green tea leaves to make matcha are shaded for usually 20 days before they are picked. Restricting sunlight on the plants increases the chlorophyll content and prevents the breakdown of amino acids like l-theanine. Our matcha is shaded for 4 weeks (28 days) before harvest so it offers you a fragrant tasting, nutrient dense drink.
  • Location: Green tea is grown in many regions of the world. Japan is known for producing the highest quality green tea to make matcha. Our matcha comes from Kagoshima region of Japan which is reputable for growing high quality green tea leaves which can then be delivered to you.
  • Radiation Testing: Yep, that's right! Green tea can be contaminated with radiation so you definitely want the tea tested before it is ground into matcha! All batches of our matcha is always tested with γ - ray Spectrometry (Germanium Semiconductor Detector) so you can rest assured that you are consuming high quality matcha.
  • Production process: Each stage in the production of matcha is vital in keeping the nutrient content high and preserving the taste.
    The destemming/deveining process is where the stems and veins of the leaf are removed so you are left with the plump juicy green leaf only. Our high grade matcha does not include the stems or veins so the result is a vibrant green matcha powder with maximum health benefits.
    The grinding process is where the leaves are then converted into a powder. You want a fine powder that can easily be whisked, not a course clumpy powder. Our matcha is stone ground to produce a fine powder which easily dissolves :)
