Want fresh pastries from the comfort of your own home? This delicious, buttery and flakey Matcha Almond Croissant is quick and easy to whip up in under 30 minutes. Did we mention that the smell of these freshly baked Matcha Croissants is incredible!
This is the best way to use up day old Croissants that have started to get a bit dry or stale. We have made a Matcha Almond Frangipane to go over and inside the croissants. Matcha compliments the sweetness of the almond paste frangipane as it helps reduce the sweetness and adds a fresh fragrant note when baked.
Ingredients:
- 2 day old croissants. They can be fresh but fresh croissants may be too flakey after baking.
- 1 tablespoon High Quality Matcha Powder
- A pinch of salt
- 1/4 teaspoon vanilla paste/essence, optional
- 1 egg
- 25 gram castor sugar
- 50 gram almond meal
- 60 gram softened butter
- Flaked almonds for topping
- Icing sugar to dust
How to:
1. Combine the Matcha powder, salt, vanilla, egg, almond meal and softened butter into a large bowl and which until it is smooth and no more lumps visible.
2. Cut the croissants horizontally in the middle. Fill the croissants with the Matcha frangipane and place more frangipane on top of the croissants.
3. Add almond flakes on top of the croissant. The frangipane will hold it in place.
4. Bake in a fan oven at 180 degree for 20 minutes. Check to make sure it doesn't burn.
5. Let it cool, dust with icing sugar and indulge in this delicious pastry!
