Matcha Nama Chocolate

These bite sized Matcha Chocolates are an indulgent little treat for yourself or for that special someone. 'Nama' chocolate is a type of ganache that is velvety smooth, fresh and means raw in Japanese. It is simply made from fresh cream and high quality chocolate containing cacao. We've placed a green spin on this and incorporated our high quality Matcha into a velvety smooth white chocolate blend to create this Matcha Nama Chocolate. 

The sweetness of the white chocolate is balanced by the flavour of the Matcha and has a slight bitter after tone like what cacao would have. It is light & fresh but decadent and melts in your mouth.

 

Ingredients:

  • 300 gram white chocolate
  • 150mL whipping cream
  • 1 tablespoon Matcha

How to:

  1. Line a loaf pan (roughly 20cm x 12cm x 12cm) with baking paper and leave this aside. 
  2. Heat the whipping cream over the stove top.
  3. Once the whipping begins to boil, remove it off the stove and let it cool down for a minute before adding in your Matcha. Do not let the whipping cream over boil.
  4. Add in the Matcha and whisk with a balloon whisk until the Matcha is well dissolved.
  5. Using the double boiler method or microwave, heat up the white chocolate until it has melted. Be careful to not burn the white chocolate.
  6. Slowly add in the matcha cream and whisk thoroughly until a smooth velvety consistency. This is a good arm workout.
  7. Pour the mix into your lined loaf pan and let it set in the fridge for 2-3 hours.
  8. Remove it from the fridge, gently lift the matcha chocolate out of the loaf pan and cut it into small bite size squares. 
  9. Dust this off with more matcha and enjoy the bite size pieces of goodness. 

 

Tips and Tricks:

Make sure that the bowl you are using to melt your chocolate in is completely dry. Any moisture in the bowl can cause the chocolate to seperate.

When mixing the matcha cream into the melted white chocolate, make sure to continue to stir without letting it sit for too long. You want to keep mixing everything while the chocolate is still melted and continue to mix until it is smooth and uniform.

Use a slightly oiled knife to slice the matcha chocolate and wipe the knife between each slice to keep things clean!
