Matcha Neopolitan Cookie

A soft and crumbly cookie made of all things Green Tea. There's 3 flavour combos going on here; a decadent cookie dough meets a combination of Matcha Green Tea for a fragrant fresh flavour & Hojicha Roasted Green Tea which has a richer cocoa flavour. 

We've made some nourishing substitutions for this cookie dough! Instead of white flour, we have used buckwheat flour which is gluten free. We have also substituted butter for coconut oil which gives a similar creamy effect. But this cookie is so delicious, your taste buds wont even notice the difference!

 

Ingredients:

  • 1.5 cups of buckwheat flour
  • 1 teaspoon baking powder
  • A pinch of salt
  • 3/4 cup of coconut oil, softened. This is roughly 110 grams.
  • 1/2 cup of brown sugar packed.
  • 2 medium eggs. Approx 100 gram
  • 1 tablespoon Matcha Powder
  • 1 tablespoon Hojicha Powder

 

How to:

  1. Mix buckwheat flour, baking powder and salt in a bowl. Leave this aside.
  2. Line a large baking tray with baking paper and leave aside.
  3. In a large bowl, place softened coconut oil and brown sugar. Beat until it is light and fluffy.
  4. Add the eggs into the large bowl and mix until combined.
  5. Using a spatular, add the flour mixture into the large bowl and fold gently until well combined.
  6. Divide the dough up into 3 portions. 
  7. To one of the portions, add Matcha. To the second portion, add Hojicha. Leave the other portion as original cookie dough flavour.
    Note: To mix the Matcha or Hojicha powder into the dough, the easiest way we found is to use your hands! Wear gloves so it doesnt stain your fingers and nails. You can also use a spatula but this will take longer.
  8. Roll each flavoured dough into 12 even size balls. If the dough is getting too soft, place it into the fridge for 15 minutes to allow it to firm up before you keep going.
  9. Place one of each flavoured dough balls into your palm, roll it into a circle and place it on your baking sheet. Gently press it down. This dough will not spread much.
  10. Bake for 15 minutes at 180 degree. Let it cool down and enjoy with your favourite Matcha tea.
