Matcha Pear Streusel Muffins (Crumb Topping)

These soft, fluffy and healthy matcha pear muffins are easy to make, with no fancy equipment needed. Just a bowl and a fork to whisk everything together. These muffins have little added sugar, made using buckwheat flour (naturally gluten free) and contain all the goodness of our high quality matcha.

The addition of pears to this recipe makes the muffins soft and less dry. It also adds in so much natural sweetness. We also topped these off with a buttery matcha streusel crumb for some extra yum. Bake these for half an hour and let them cool down slightly before taking a bite into these soft fluffy matcha muffins. 

 

Ingredients:

For the Streusel Crumb:

  • 40 gram butter, melted
  • 45 gram Cassava flour (Can also use buckwheat flour / almond meal)
  • 25 gram sugar
  • 1 teaspoon Matcha

For the Matcha Pear Muffins:

  • 1 tablespoon Matcha
  • 100 gram gluten-free flour
  • 150 gram buckwheat flour (can use all buckwheat or all gluten-free flour)
  • 1.5 teaspoon baking powder
  • 3 eggs
  • 50 gram butter, melted and cooled down.
  • 80 gram oil
  • 320 gram butter milk (can substitute for plain greek yogurt)
  • 80 gram raw sugar
  • 3 pears, peeled and chopped into small pieces

 

How to:

  1. Combine all the ingredients for the Matcha Streusel in a bowl and mix until it forms a crumbly, buttery dough. Leave this aside.
  2. Preheat th oven to 180 degree.
  3. To make the Matcha Pear Muffins, combine the Matcha, flours and baking powder in a large bowl. Mix until it is well combined.
  4. In a seperate bowl, add the eggs, oil, butter, buttermilk and sugar. Whisk this until there are no lumps or clumps. 
  5. Combine the wet batter with the flour mixture. Continue to fold the mix until all the flour is combined. 
  6. Add in the chopped pears and fold this in.
  7. Divide the batter into a muffin tray. This makes about 12-14 muffins depending on the size of your tray.
  8. Sprinkle the Matcha Streusel Crumb on top of the muffin batter before it goes into the oven.
  9. Bake this for 30 minutes at 180 degree in a fan oven. 
  10. Remove it out of the oven after 30 minutes. Use a skewer to check that the inside is fully cooked. 
  11. Take it out of the oven to cool and enjoy them while they are still slightly warm!
