Matcha Protein Pancakes - Gluten Free

Pancakes are for every occasion so we have created a wholesome pancake recipe that is super simple, with minimal ingredients. Enjoy this solo or share it with friends and family.

This recipe is gluten free and can be nut free, dairy free with some simple substitutions. We have used a vanilla whey protein powder by Noisyguts which helps to support gut friendly bacteria and is FODMAP friendly. We enjoy the consistency and taste of this protein powder, but feel free to substitute it for a vegan protein powder if that is what you prefer.

 

This recipe uses high quality matcha which has high levels of polyphenols. The polyphenols is Matcha green tea have also been linked to promoting a healthy microbiota as the polyphenols and polysaccharides are broken down in the gut and provide fuel for the healthy gut bacteria. Matcha has also been shown to stabilise blood sugar levels due to the high levels of polyphenols. This makes it a great addition to your morning recipes.

The combination of caffeine and L-theanine naturally found in Matcha green tea also gives you a boost of energy sustained throughout the day so you can take on whatever life throws at you.

This recipe makes 4-5 pancakes and serves 2.

Ingredients:

  • 2 eggs
  • 1/2 cup protein powder (about 8 TBSP)
  • 1.5 tsp ceremonial grade matcha
  • 50mL almond milk (about 3 TBSP)
  • 1/2 tsp baking powder
  • 1 TBSP almond flour
  • Coconut Oil for cooking

 

How to:

  1. Combine all the dry ingredients in a bowl
  2. Add in the eggs and almond milk. Mix until well combined
  3. Keep mixing until it is lump free. The mixture should slowly drip off the mixing spoon/whisk. If it is too thick, add 1 tsp of almond milk at a time. If it is too runny, add 1 tsp of almond flour at a time.
  4. Heat a skillet on low-med heat. Add in coconut oil for cooking. 
  5. Add 3 TBSP of the mixture at a time for each pancake. Allow it to slowly cook.
  6. Once the bottom of the pancake is slightly brown, flip it over and continue to cook.
  7. Enjoy while it is slightly crispy on the outside and fluffy on the inside. Yum!

Top the pancakes with maple syrup, honey, fruit or nuts & seeds. Remember to share this delicious healthy recipe with friends and family.
