Overnight Oats are so versatile. They are creamy and hearty but also are highly nutritious as well. We've also used Chia seeds in this recipe for the added fibre and healthy fats. They also make the recipe creamy and thick.

This recipe is completely plant based, but feel free to use dairy as a substitute. It's super adaptable and easy.

 

Ingredients: serves 2

For the Overnight Oats:

  • 1 ripe banana, mashed
  • 2/3 cup oats
  • 2 tablespoons chia seeds
  • 1/4 cup coconut yogurt
  • 1 cup soy milk
  • optional: few drops of vanilla extract

For the Matcha Cream:

  • 2 tablespoons Chia seeds
  • 2 teaspoons Matcha
  • 2 tablespoons maple syrup / honey / sweetener of choice
  • 1/2 cup of soy milk
  • 1/2 cup coconut yogurt

 

How to:

  1. To make the overnight oats: mix everything into a large container until well combined. Leave this overnight do the oats and chia absorb the liquid.
  2. To make the Matcha cream: blend all the ingredients in a blender or food processor. The Chia seeds will help the mixture gel up and become creamy. If it is too thick, add more soy milk to thin it out. Leave this overnight.
  3. In a glass, layer the oats, then matcha and continue to do this until the glass is full.
  4. Serve with a thin layer of coconut yogurt and sprinkle with Matcha!
