Matcha Walnut Cookies

Walnut cookies are a staple during Lunar New Year. They are melt in your mouth deliciousness with a crunch of toasted walnuts. They are also a symbol of happiness.

We've added some Matcha goodness to these delectable treats. The Matcha adds a fresh fragrant flavour and cuts through the richness of these cookies.

Ingredients:

  • 60 grams walnuts, toasted. If you cannot find toasted walnuts, simply toast them yourselves for 10minutes at 180 degree Celsius.
  • 130 grams plain flour
  • 20 grams rice flour
  • 8 grams High quality Matcha (choose high quality as you want the colour and flavour)
  • 1 teaspoon baking powder
  • a pinch of salt
  • 1 egg, 1/2 an egg in the cookie and other 1/2 used to brush over the cookies before baking
  • 60 grams lard (traditionally, these cookies used lard. If you cannot find lard, you can substitute for softened butter)
  • 80 grams raw sugar
  • 10 grams sesame seeds

 

How to:

  1. Toast the walnuts on a pan on low heat until they become slightly brown. You can also roast them for 10minutes at 180 degree Celsius. Check that they don't burn!
  2. Once cooled, grind the walnuts in a blender into a course crumb.
  3. In a large bowl, add the lard and sugar. Using an electric beater, beat the lard and sugar for 3 minutes. 
  4. Add 1/2 an egg and continue to beat for another minute.
  5. Sift in the rice flour, plain flour and baking powder. Add the sesame seeds, salt and walnuts in as well.
  6. Mix the cookie batter until everything comes together. If the mixture is too sticky, add a little bit more flour to the mix.
  7. Place the dough in the fridge for 10 minutes until firm.
  8. Preheat an oven to 180 degree Celsius and line a baking tray with baking paper.
  9. Roll out a tablespoon of dough into a round ball. Place them on the baking tray about 3cm apart.
  10. With the remaining egg mixture, brush them on to the cookies before baking. 
  11. Bake for 15 minutes.
  12. Serve with fresh tea and remember to share!
