This healthy Matcha Yogurt Bark is high in protein, vegan and gluten free.
Simple to make and only takes 10 minutes of preparation. A frozen treat that you can customise with your favourite toppings to your hearts delight.

Ingredients: makes 2 large barks
Matcha yogurt bark:
- 300 gram yogurt
- 2 tbsp rice malt syrup or any other liquid sweetener
- 2 tsp of high quality ceremonial grade matcha
- 1 tbsp of your favourite collagen powder - optional
Toppings:
- Pistachios roughly chopped
- Dark Chocolate roughly chopped
- Sultanas
- Strawberries sliced
- Blueberries
- Hemp seeds
- The toppings can be endless!
How to:
- Mix all the ingredients for the matcha yogurt bark in a bowl. Keep mixing until everything is velvety smooth.
- Spread a thin layer with a thin spatula across baking paper, about 1 cm thick.
- Start sprinkling your favourite toppings on, pressing them in gently.
- Place into the freezer for 4 hours or overnight.
- Crack them into pieces and enjoy them right away!
