If you love overnight oats, you'll love this overnight Matcha rice porridge using organic brown rice flakes! It's the perfect satiating and nourishing breakfast for sustained energy throughout the day.
What are rice flakes? Brown Rice Flakes has been made from brown rice kernels that have been steamed, rolled, flattened and dried out to produce flakes. They are highly nutritious and are a great oat substitute. They also absorb a lot of great flavour with other ingredients you add to the recipe. Rice flakes are 100% Gluten free and Vegan.
Why use a high quality Matcha? High Quality Ceremonial Matcha comes from the young green tea leaves and are the first harvest of the tea leaves. These tea leaves have a natural sweetness without the bitterness of lower grade Matcha. They also have much greater nutritional profile and beneficial compounds like L-theanine, chlorophyl and polyphenols.
Ingredients: makes 2 serves
- For the overnight rice flakes:
- 1 cup brown rice flakes
- 1 cup kefir
- 1 + 1/4 cup coconut water or can substitute for milk / plant based milk for a creamier texture
- 2 teaspoon High Quality Matcha
- 2 tablespoon Chia seeds
- 1 apple, peeled and grated
- To serve:
- yogurt, nuts and seeds, chopped fruit, honey or maple syrup.
How to:
- In a large bowl, mix all the ingredients for the overnight rice flakes.
- Leave this overnight, or for at least 3 hours, in the fridge.
Note: If it is very thick when you take it out of the fridge, add quarter cup of plant based milk to thin it out. - To serve, scoop a serving into a smaller bowl, top it with some nuts, fruits, yogurt and a drizzle of maple syrup for more sweetness!
