Matcha Coconut Chia Pudding

It's a simple, creamy, delicious Chia Pudding loaded up on fibre & nutrients. The addition of Premium Ceremonial Grade Matcha gives an extra boost of health benefits to get you started in the morning. It's easy to make ahead of time to be your nourishing breakfast, quick snack or indulgent dessert!

 

Ingredients: 

Serves 2-3

  • 1/3 cup Chia seeds
  • 3/4 cup Coconut Water
  • 3/4 cup Coconut Milk - not cream
  • 2 heaped teaspoons Ceremonial Grade Matcha
  • 1 tsp grated ginger - for some added spice
  • Pinch of salt
  • 1 Tbsp Agave Syrup
  • Toppings: coconut yogurt, blueberries, goji berries, bananas & hemp seeds

 

Method

  1. Whisk matcha powder and coconut water together until dissolved.
  2. Add in the chia seeds, coconut milk, ginger, salt and syrup and stir until combined.
  3. Place container into the fridge and leave for a minimum of 4 hours. You can leave it overnight for to allow the chia seeds to absorb more liquid.
  4. Take it out when it is ready and garnish with your desired toppings. Enjoy!

 

Note: if it is too thick after setting, thin it down by adding some more coconut milk or water.
