You wouldn't guess what these brownies are made from! There's no flour, no eggs, no butter, but instead we are using wholesome ingredients like white beans, avocado and matcha. Who doesn't love to finish the day off with a little sweet treat! This nutrient jam packed brownie is a favourite of mine and it's one of the easiest recipes to make. All you need is to add the nourishing ingredients into a food processor or a powerful blender, blend until smooth and bake.
Beans add fibre and resistant starches to the recipe, replacing the flour. So does that make these brownies gluten free? Yes :)
Avocado adds healthy fats and creaminess to the brownies replacing traditionally used butter.
This recipe calls for a food processor, but it will also work in a blender. You may just need to stop every now and then to scrape down the sides of the blender to form a smooth paste.
Ingredients:
- 1x 400g Cannellini beans, rinsed and drained. Can be substituted for butter beans.
- 1 small avocado, roughly the size of you palm.
- 1/2 cup maple syrup
- 1/4 cup apple puree or mashed banana
- 1/8 cup olive oil
- 1 cup almond meal
- 2 TBSP Quality Matcha Powder
- 1 tsp baking powder
- 1 cup hazelnuts or walnuts
- 50 grams vegan dark chocolate, roughly chopped
Method:
- Line a ~ 24cmx14cm loaf tin with baking paper and preheat the oven to 180 degree C at fan setting.
- Place all ingredients, except for hazelnuts and chocolate into a food processor.
- Blend all the ingredients until a smooth paste forms.
- Remove the blade from the food processor. Fold in the hazelnuts and chocolate.
- Transfer the batter into your lined loaf tin and bake for 35 minutes at 180 degree celsius.
- Check to see if the brownie is ready by placing a skewer into the centre. If the skewer comes out wet, continue to bake for another 5 minutes at a time.
- Allow the Matcha brownie to cool down before eating. The brownie will become firmer as it cools down.
