Matcha Green Tea 'Bingsu' Shaved Ice

Make this healthy and refreshing shaved ice dessert at home without any fancy equipment or ice shaver. Bingsu is a Korean milk based shaved ice but many countries and regions of the world have their own version of this. The best part is adding whatever toppings you like. Some common toppings include fruit, ice cream, red beans, soybean powder and even biscuits, cookies and chocolate.

We have made a simple and vegan version of this recipe and added in the extra goodness of Matcha green tea. The flavour of the Matcha shines through without the bitterness when you use a high grade Matcha and is perfectly balanced with the sweetness from the fruit and creaminess from the coconut cream and milk.

Ingredients: Serves 2

  • 2.5 teaspoon Ceremonial grade Matcha
  • 100mL warm water
  • 500mL milk or plant based milk of choice
  • 2 scoops (10 grams) of unflavoured collagen powder 
  • 2 tablespoon maple syrup - optional
  • toppings:
    • 4 tablespoon coconut cream
    • 1/2 teaspoon matcha powder
    • fruit - melon and mango work well
    • Serve it up with a scoop of your favourite ice cream - optional

 

How to:

  1. In a bowl, whisk Ceremonial Grade Matcha with warm water for a minute or until a layer of froth appears.
  2. In a seperate measuring jug, pour in 500mL of your milk, add in the collagen powder and mix this until dissolved. 
  3. Add your matcha to the measuring jug as well. 
  4. Pour the Matcha milk into an ice tray and allow it to freeze for at least 4 hours.
    *Tip: If you do not have enough ice trays, pour the matcha milk into a large zip lock plastic sleeve and simply place it into the freezer laying flat to freeze. You can then break up the frozen Matcha milk into shards once it has frozen.*
  5. Once the Matcha milk has frozen, place the ice cubes or shards into a blender or food processor. Pulse this for 3 seconds each time until the ice resembles a fine crumb.
  6. Scoop out the shaved ice into bowls.
    *Tip: Place your serving bowls in the freezer beforehand to prevent the ice from melting too quickly*
  7. Top it off with coconut cream and fruit for a healthy, refreshing frozen treat. Top it off with a scoop of ice cream if you are craving something more creamy! The toppings are endless :)
