Vegan/GF Matcha Chocolate Chip Cookies Recipes

Soft on the inside, crispy on the outside. These wholesome Matcha Cookies are irresistible and perfect for sharing! It is a simple recipe you can make under 30 minutes and uses simple pantry ingredients. There's minimal clean up as well because you can make these matcha cookies without any fancy equipment, just simply a bowl and something to mix with :)

Adding Matcha into the recipe balances with the sweetness from the chocolate and cookies. We prefer cookies that are not overly sweet and this recipe is perfect for that. Using a high Quality Matcha powder, you also get all the added health benefits from the green tea leaves. High Quality Matcha also has a vibrant green colour that we love. 

Did we mention they are Vegan, Gluten Free and can be made allergy friendly by omitting the hazelnuts.

 

This recipe makes 8 cookies. 

Ingredients:

  • 1.5 Tablespoon High Quality Matcha Powder.
  • 1 cup of Gluten Free flour.
  • 3/4 teaspoon baking soda.
  • 1/4 teaspoon salt.
  • 1 teaspoon cornflour or tapioca starch. This helps the cookies hold its shape and adds a little chewiness to the texture.
  • 1/4 cup brown sugar or coconut sugar.
  • 1/4 cup caster sugar or white sugar.
  • 1/4 cup neutral flavour oil. We used light flavoured olive oil which worked well.
  • 1/8 cup water.
  • 1/2 teaspoon vanilla essence.
  • 1/2 cup of roughly chopped vegan dark chocolate & roughly chopped up hazelnuts. We love the brand Pana chocolate :)

 

How to:

  1.  In a bowl, mix the flour, matcha, salt and baking powder until it is evenly mixed. 
  2.  In a seperate bowl, place your oil, water, sugars and vanilla essence. Whisk for about 2 minutes until everything is well incorporated.
  3. Gently add the flour mix into the wet mixture and fold. Continue to fold in the flour until everything is combined. 
  4. Add in your chocolate, favourite nuts and seeds and stir into the cookie batter.
  5. Place the batter in the fridge for about 5 minutes. This helps to firm up the cookie batter before you roll them out.
  6. On a lined baking tray, roll out your cookies to the size of a golf ball. You should have roughly 8-10 cookies. Press them down slightly to flatten them.
  7. Optional but recommended: Chill the cookies in the fridge for about 2 hours before baking. This helps them firm up and hold their shape when baking.
  8. Bake in the oven for 15 minutes at 180 degrees Celsius.
  9. Its hard to resist those freshly baked cookies but try and let them cool down a bit before devouring :)
