Decadent & Nutritious Matcha 'Parfait'

Layers of delicious nourishing healthy ingredients are in this decadent Matcha Parfait. While this is not your traditional parfait, it tastes just as good and made using wholesome ingredients to fuel your body.

There's 5 layers in this recipe, each layer being simple and easy to make. You can also make each layer ahead of time and assemble the parfait when you like.

 

Layer 1: Matcha Chia Pudding

Layer 2: Red Bean Paste

Soak your own or use store bought adzuki beans (unsweetened).

 

Layer 3: Coconut Milk Jelly

So quick to make! We used gelatine in this recipe, but you can opt for agar-agar if you are vegetarian or vegan.

 

 

Layer 4: Cornflakes

Add some crunch from your favourite Cereal.

 

Layer 5: Frozen Matcha Nice Cream

Ingredients:

Matcha Chia Pudding:
  • 1/4 cup Chia Seeds
  • 1 cup milk or plant based milk
  • 2 teaspoon of High Quality Matcha Powder
  • 80mL hot water
Red Bean Paste:
  • 1 cup adzuki red beans (soaked overnight)
  • 2L water to cook the beans
  • 1 tablespoon honey or sugar to sweeten.
Coconut Milk Jelly:
  • 1/2 cup coconut milk
  • 1/2 cup milk or plant based milk
  • 1.5 teaspoon gelatine
  • 3 tablespoon hot water
Cereal layer:
  • 1/2 cup cornflakes
Matcha Banana Ice cream:
  • 4 large ripe bananas
  • 100mL coconut milk or oat milk 
  • 2 teaspoon High Quality Matcha

 

How to:

The night before:
  1. Make the Matcha Chia Pudding the night before. Use our recipe here.
  2. Make the Matcha Banana Ice cream the night before using our recipe here.
  3. Cook the red beans and once they are soft and easily mashable with a fork, stop the cooking and drain out the excess water. Skip this step if using canned adzuki beans.
  4. Mash the drained adzuki red beans with a fork, add in the honey or sugar and continue to mash until a rough paste forms. It doesn't have to be completely smooth.
  5. Make the coconut jelly by dissolving the gelatine in hot water. You may need to microwave this for 10 seconds to have it completely dissolved. 
  6. Before the gelatine cools down, add in both types of milk and whisk thoroughly.
  7. Transfer this to a bowl or tin, and let the mixture cool down before placing it in the fridge to set overnight.
To assemble:
  1. In a tall glass, layer each component. Start with the Chia pudding, red bean paste, milk pudding, cereal and top it off with your Matcha Banana Ice cream.
  2. You will not end up using all the seperate layers but you can keep these in the fridge or freezer to consume later on.
  3. Enjoy your delicious treat :)
